Pecan Pie

Since I had extra pecans lying around, and since I didn't want to go back to studying just yet, I went ahead and made my pecan pie...

1 cup karo syrup
3 eggs, slightly beaten
1 cup sugar
2 Tbsp margarine or butter, melted
1 tsp vanilla
1 1/4 cup pecans
1 unbaked 9-inch pie crust

Stir the first 5 ingredients together, then mix in pecans. Pour into pie crust. Bake at 350 degrees for 50-55 minutes.

Brown Sugar Glazed Salmon

1/2 cup brown sugar
1/4 cup chopped pecans
1 Tbsp. softened butter
2 tsp lemon zest
2 tsp fresh lemon juice
1/4 tsp cayenne pepper (optional)
1 lb salmon fillets

1. In a small bowl, combine sugar, pecans, butter, lemon zest, lemon juice, and cayenne pepper (if desired); salt and pepper to taste.
2. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Place salmon skin side down on baking sheet. Evenly spread mixture over salmon fillets.
3. Bake in a preheated 425 degree oven until fish flakes easily with a fork (10 minutes per inch of thickness).
